Recipes and Beach Pics!

I love to cook, however, I no longer have time to do much of it so the simpler a recipe the better.  These two recipes I like to consider "recipes".... yes, in quotations because I don't consider anything this minimal or easy to be real cooking but we will take what we can get in this house.

Baked Eggs & Avocados
*Cut avocado in half, remove seed, and a little bit of the fruit from where the seed was 
*Crack an egg in to the hole where the seed was (you need two eggs if using the whole avocado)
*Season....I use salt, pepper, and onion powder 
*Bake at 425 until the egg is done to your liking....I like my eggs runny so 15 mins does the trick for me
Note- Unless you are using small or medium eggs (and lets face it everyone uses large eggs) your egg will not all fit in the avocado.  I didn't care, however, I did make little tin foil "boats" for my avocados so that egg did not spill on to the baking sheet and stick

Loaded Sweet Potatoes- Got this one from Biggest Loser
*Bake Sweet Potato
*Brown some ground turkey
*Top potato with  green salsa, turkey, red salsa, and a dollop greek yogurt
Note- I know it doesn't sound appetizing but it really is and very very filling!

Don't you agree those are only "recipes."  I need to find more of these...

Now on to the pics...  We had 5 straight days of glorious warm weather earlier this month.  And I don't just mean mildly unseasonable warmth....I mean it honestly was hot at times and I had my kids on the beach for 5 days in a row type of weather.
